Il Cavallino organic extra virgin olive oil is produced exclusively from olives grown according to the principles of organic farming, which excludes the use of pesticides, herbicides and chemically synthesized fertilizers and aims to increase the organic fertility of the soil.
The company is located in an area dedicated to the cultivation of olives in the vicinity of land not exploited for intensive cultivation, which has allowed for easier consolidation of organic cultivation.
Our olive trees are planted according to the traditional method: the plants are distant from each other so that each tree has an adequate portion of land from which to draw water and nutrients, also the proximity of our land to the sea naturally favors the approach to organic cultivation .
The olive harvest is carried out directly from the tree, anticipating the natural drop of the fruit due to over-ripening.
This operation begins when the color of the olives changes from green to black, which allows to obtain an oil with a fruity taste of medium intensity, with a hint of fresh artichoke, rosemary and almond and an excellent balance between spicy and bitter.
The peculiar organoleptic characteristics of organic Il Cavallino extra virgin olive oil are also due to the careful pressing operations that take place within 24 hours of the olive harvest, at the mill with a continuous two-phase extraction system.
It is perfect for salads and pinzimonio, Catalan shellfish, vegetable soups, in general very versatile in the kitchen.
The processing temperature is controlled and does not exceed 27 ° C. The control of the production chain, from the cultivation of olives to bottling is certified and verified by the control body CCPB srl code IT BIO 009
