Taste: Fruity and moderately delicate, slightly citrusy with a hint of bergamot, yellow flowers, tomato and green pepper. Slightly bitter, perfectly harmonized with its spiciness. Lingers on the palate
Use: To appreciate its characteristics it suits the following flavours: Pasta al polpo di scoglio (octopus pasta) still warm, salted fish, braised pigeon or dove. Tortelli Toscani with oil, very good with “the catch of the day” fish crudités, pasta with seafood, shellfish stew.
Cultivar: 45% Frantoio, 40% Leccio del Corno, 5% Lazzero and 10% Maurino
Taste: Medium intensity fruity flavour, with hints of fresh artichoke, rosemary and almond. A perfect balance between spicy and bitter.
Use: Salads and crudités, catalana di crostacei (shellfish stew), vegetable soups, very versatile in Italian cuisine.
