PUMPKIN PASTA AND SPRING ONION OIL

Preparation Ingredients:
· Maccheroncini 320 g
· Spring onions 200 g
· Potatoes 250 g
· Il Cavallino organic extra virgin olive oil: 10g
· Laurel 2 leaves
· Vegetable broth to taste
· Fine salt to taste
· Black pepper to taste
· Pumpkin seeds to taste
FOR THE PUMPKIN CREAM 
· Delicate pumpkin 500 g
· Extra virgin olive oil 80 g
· Fine salt to taste
FOR THE SPRING ONION OIL 
· Spring onions green leaves 100 g
· Sunflower seed oil 100 g TO CREATE
· Butter 50 g
· Grana Padano PDO 100 g
To prepare the pumpkin and spring onion oil pasta, take the pumpkin, divide it into four parts, keep the skin, but remove the seeds and internal filaments. Wrap the wedges in aluminum foil suitable for cooking in the oven. Cover a baking sheet with more foil, place the pumpkin and bake in a preheated oven at 180° for 90 minutes, this way the pumpkin will remain moist. Meanwhile, prepare the spring onion oil: separate the green tops and slice the white part. Cut the tops into small pieces and pour them into a mixer adding the seed oil. Blend for at least 2/3 minutes, several times. Filter the puree obtained through a fine mesh strainer (thus you will obtain an aromatised oil). Once the pumpkin is ready, take it out of the oven. Drain it in the mixer, slowly pour the oil and a pinch of salt. Blend until the cream is smooth and set aside. Peel and cut the potatoes into cubes. In a pot with a high edge, pour a drizzle of olive oil and the white part of the spring onion. Add the potatoes and flavor with the bay leaf. Add salt and potatoes, brown over moderate heat. Add the pumpkin cream, mix everything well and pour 2 ladles of vegetable broth or hot water, cover with the lid and cook for 10 minutes. At this point, pour the pasta into the pot. Cook by adding vegetable broth or hot water just enough to bring it to the boil, remove the bay leaf and stir occasionally. Stir in the butter and grated Grana Padano DOP. Serve and flavor with the spring onion oil. Garnish with pumpkin seeds. The pumpkin and oil pasta with spring onion is ready to be served.
