CATALAN-STYLE SHRIMP

Preparation Ingredients:
  • Red Shrimp 300 g
  • Extra Virgin Olive Oil Il Cavallino Biologico 100 g
  • Fine Salt to taste
  • Lemon Juice 100 g
  • Black Pepper to taste
  • Tomatoes 800 g
For Marinated Onions:
  • Red Onions 100 g
  • White Wine Vinegar 200 g
For Flavored Water:
  • Red Onions 100 g
  • Celery 1 stalk
  • Carrots 100 g
  • Lemons 1
  • Thyme 1 sprig
  • Fine Salt to taste
To Garnish:
  • Salt Flakes to taste
  • Chives to taste
To prepare the Catalan-style shrimp, start by peeling and slicing the red onion. Place it in a jar, cover it with white wine vinegar, seal, and let it marinate for 8 hours.
Wash all the cherry tomatoes and cut them into wedges of the same size. Place them in a bowl.
In a separate bowl, pour the lemon juice and Il Cavallino Biologico olive oil, add salt, pepper, and emulsify with a whisk.
After the marinating hours, take the marinated onions, drain them through a colander, and press them with the back of a spoon to squeeze out excess liquid. Add the onions to the tomatoes.
Season the mixture with part of the previously prepared emulsion, mix well, and set aside the salad.
Deal with the shrimp: shell them, removing the tail, head, and shell. Also, remove the black filament on the back.
Once cleaned, prepare the flavored water: place a saucepan on the heat with water, onion, celery, carrot, and half a lemon. Bring to a boil. Immerse the shrimp and blanch for a few seconds. Drain the shrimp and dry them on paper towels.
Everything is ready to serve: on a serving plate, pour the tomatoes and shrimp. Season with the remaining emulsion, chopped chives, and salt flakes.
The Catalan-style shrimp is ready to be enjoyed.
